Fluffy Oat Pancakes

Indulge in the fluffy goodness of these vegan oat pancakes, perfect for a wholesome breakfast or brunch. Made with plant-based milk and oat flour, they offer a nutritious twist on a classic favorite. Packed with fiber, vitamins, and minerals from oats, they provide sustained energy and support digestion. Ingredients:

  • 2 cups plant-based milk

  • 1 Tbsp apple cider vinegar

  • 1 cup organic oat flour

  • 1 cup organic flour (wheat, oat, buckwheat, or almond flour)

    *Gluten-Free Option: Use another cup of oat flour (confirm your oat flour is gluten-free)

  • 1 Tbsp baking powder

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup applesauce or mashed banana

  • 2 tsp vanilla extract

  • Optional: 1/4 cup of add-ins like chocolate chips, diced apple, blueberries, etc.

  • Choice of topping: fruit, pure maple syrup, etc.

Instructions:

  1. In a medium bowl, combine the plant-based milk and apple cider vinegar.

  2. In another bowl, mix the oat flour, baking powder, cinnamon, and salt.

  3. Add applesauce or mashed banana and vanilla extract to the bowl with the milk mixture.

  4. Combine the dry ingredients into the wet ingredients and stir until well mixed. Fold in any additional add-ins if desired.

  5. Heat a skillet over medium heat and lightly spray with olive oil. Scoop batter by about ¼ cup onto the skillet.

  6. Cook the pancakes until bubbles begin to form on the surface and the bottom side is lightly browned, about 2-3 minutes.

  7. Flip the pancakes and cook until the second side is browned, about 2 more minutes.

  8. Serve the pancakes immediately or keep them warm in a 200-degree oven while cooking the remaining batter.

  9. Serve topped with fruit and pure maple syrup. Enjoy your delicious pancakes made with love!
